These cookies have a nice soft texture on the inside and a pleasant crunch on the outside. Easily modified to be gluten-free. This recipe is a vegan version of the oatmeal raisin cookie recipe from the Moosewood Cookbook.
People love this recipe. It is easy because there is no baking and it takes about 15 minutes to prepare. Don't plan on having any leftover because your guest will not be able to eat one and once they have one....they are addicting!
